Description: It’s common in Southeast Asia to eat cashews with the skin (also called the testa), but elsewhere, the skin is usually removed during processing. The skin gives the roasted cashew a crispy, umami flavor that’s distinctive and delicious.

The cashews are roasted with salt in the traditional method, in rotating cast iron pots heated by wood, which imparts an extra rich, smokey flavor. Enjoy them with the skin on for added flavor or peel the skin off for a traditionally nutty cashew taste.

Taste: Nutty and crispy, with a hint of smokiness.

Origin: Binh Phuoc Province, southern Vietnam.
